How to Check Pure Desi Ghee at Home: 4 Easy Tests (Asli Ghee Ki Pehchan)
Desi ghee is a part of almost every Pakistani kitchen, from parathay to halwa. But a lot of ghee in the market is mixed with vanaspati, cheap oils or added colour. So how can you tell if your ghee is real? Here are four simple tests you can do at home.
1. The heat test
Put a spoon of ghee in a pan on low heat. Pure desi ghee melts quickly and turns a clear golden-brown colour. If it takes a long time to melt or turns pale yellow, it may be mixed with vanaspati.
2. The palm test
Place a little ghee on your palm. Pure ghee starts melting quickly from body heat. Ghee that stays solid for a long time may be mixed with other fats.
3. The smell test
Real desi ghee has a rich, nutty and sweet smell, especially when warmed. A plain, oily smell, or no smell at all, is a warning sign.
4. The double-boiler test
Melt some ghee in a glass jar placed in hot water, then put the jar in the fridge. If the ghee separates into different layers, other oils may have been added.
Note: These home tests give you a good idea, but only a lab test can give a final answer.
Why bilona ghee is different
Bilona ghee is made from makhan churned out of dahi, then cooked slowly. This old method takes more time and more milk, but gives the ghee its real taste and smell.
